Amaretto ice cream with plum compote and almond flakes

For 4 people
  • 1 Glass (680 ml; Abtr.gew. 395 g) plums
  • 20 g Cornstarch
  • grated zest of 1 untreated lemon
  • Juice of 1/2 lemon
  • 2 EL Almond Liqueur
  • 1 EL Sugar
  • 1 cinnamon stick
  • 4 Amaretto balls Almond ice cream (approx. 50 g each)
  • roasted almond flakes and lemon balm

Drain the plums on a sieve. Catch the juice. Mix starch and 3-4 tablespoons of juice. Put the rest of the juice, lemon zest, juice, almond liqueur, sugar and cinnamon stick in a saucepan and bring to the boil. Remove from the heat and bind with the starch. Bring to the boil again. Add the plums and fold in. Let cool down. Arrange ice cream and plum compote in small glass bowls and serve sprinkled with flaked almonds and decorated with lemon balm
