Amaretto cherry cake

For 4 people
  • 4 eggs (size M)
  • 125 g Sugar
  • 1 packet Vanillin sugar
  • 3 packet cappuccino powder
  • 1 pinch salt
  • 125 g flour
  • 25 g cornstarch
  • 1 EL Cocoa powder
  • 2 TL Baking powder
  • 1 Glass (720 ml) Morello cherries
  • 1 packet red cake topping
  • 3 EL Sugar
  • 3 sheets white gelatine
  • 3 (250 g) Mug of whipped cream
  • 8 cl Amaretto liqueur
  • 100 g ground almonds
  • 100 g almond leaves
  • 75 g Meringue

Beat eggs, sugar, vanilla sugar, cappuccino powder, salt and 4 tablespoons of water for approx. 5 minutes until white and frothy. Mix the flour, cornstarch, cocoa and baking powder and sieve onto the egg mixture. Carefully fold in with a whisk. Pour the batter into a springform pan (26 cm Ø) lined with baking powder. Bake in the preheated oven (electric stove: 175 ° C / gas: level 2) for about 25 minutes. Take the bottom out of the oven. Loosen the springform rim. Let the cake base cool down and cut once. Drain the morels while collecting the juice. Set aside 12 cherries for decoration. Spread the cherries on the bottom. Measure out 1/4 liter of cherry juice. Mix the icing powder with 5 tablespoons of juice. Bring the remaining juice and 2 tablespoons of sugar to the boil. Stir in the mixed powder. Briefly boil once. Spread the glaze over the cherries. Let cool down. Soak the gelatine in cold water. Beat 600 g cream and remaining sugar until almost stiff. Squeeze out the gelatine, dissolve it and mix it with a little cream. Beat in the cream, stirring constantly. Stir in the amaretto and almonds. Put 1/3 cream on the cherries and smooth out. 2. Lay the floor on top. Spread the rest of the cream all over the cake.
