Put flour, 50 g powdered sugar, salt, fat in flakes, ground almonds, fine orange fruit, ginger and egg yolk in a mixing bowl and work vigorously with the dough hook of the hand mixer. Knead quickly with cool hands to form a smooth dough. Cover the dough and let it cool for about 1 hour. Roll out approx. 3 mm thick on a lightly floured work surface and cut out stars with a cookie cutter. Place on two baking sheets lined with baking paper. Strain 75 g of powdered sugar through a sieve. Beat the egg whites with the whisk of the hand mixer until stiff. Gradually add powdered sugar. Brush the stars with the egg white icing and sprinkle with the flaked almonds. Bake the cookies one after the other in a preheated oven (electric stove: 175 ° C / gas: level 2) for 18-20 minutes.
