Almond cream with grapes

For 5 people
  • 1/2 l milk
  • 1 packet 'Vanilla-Almond' pudding powder
  • 100 g Sugar
  • 70 g chopped almonds
  • 250 g green grapes
  • 200 g whipped cream
  • 1 packet Vanillin sugar
  • baking paper

Mix 4 tablespoons of milk, pudding powder and 2 tablespoons of sugar. Boil the remaining milk. Stir in the mixed pudding powder. Bring to the boil again. Put the pudding in a bowl. Sprinkle with 20 g of sugar and let cool. Roast the almonds in a pan without fat, remove. Caramelize the remaining sugar until golden brown. Stir in the almonds. Spread the brittle on a board lined with baking paper and let it set. Wash, halve and core the grapes. Whip the cream and vanilla sugar until stiff. Break the brittle into pieces. Briefly whip the pudding with the whisk of the hand mixer, fold in the cream and brittle. Layer the cream and grapes in glasses
