Almond and marzipan wreath with rumtop fruits

  • 25 g almond flakes

Heat 150 ml milk. Put the flour in a bowl, make a well in the middle and crumble the yeast into it. Add 1 tablespoon of sugar and lukewarm milk and mix with a little flour. Cover and let rise in a warm place for 10-15 minutes. Melt the fat, add the remaining cold milk and remove from the stove. Add the remaining sugar, almonds, lemon zest, salt and milk mixture to the pre-dough. Knead everything into a smooth yeast dough. Cover and let rise for about 30 minutes. Drain the rumtop fruits and collect the liquid. Dice the fruits. Mix 350 g of marzipan and 8-9 tablespoons of rum pot liquid. Fold in the fruits. Knead the yeast dough, roll out into a rectangle (approx. 70x24 cm) and divide lengthways once. Spread the marzipan mixture in the middle of each strip. Separate the egg and brush the edges with egg white. Roll up the strips from the long side and twist them into a strand. Form a wreath and press the ends together. On a baking sheet lined with baking paper and let rise for another 15 minutes. Mix the egg yolk and cream and brush the wreath with it. Bake in the preheated oven (electric stove: 200 ° C / gas: level 3) for about 40 minutes. At the end of the baking time, cover if necessary. Toast the almonds. Knead the powdered sugar and the rest of the marzipan, divide the mixture and color it yellow and red with a few drops of food coloring. Roll out the marzipan, cut out stars and moons. Warm up the jam, strain it through a sieve and brush the still warm wreath with it. Sprinkle with flaked almonds. Decorate the wreath with marzipan stars. Makes 28-30 slices
