Allgäu cheese soup

- Remove the crust from the bread. Cut the bread into cubes.
- Bring the stock to a boil in a saucepan. Add the bread cubes and bring to the boil briefly. Puree the whole thing.
- Gradually add the cheese to the broth while stirring. Pour in the white wine.
- Heat the soup again while stirring, season with salt and sugar.
- Serve the cheese soup sprinkled with parsley.
