Allgäu cheese soup

For 4 people
  • 200 g white bread
  • 750 ml Meat broth (3 / 4l )
  • 400 g grated Allgäu Emmentaler cheese
  • 250 ml dry white wine (1 / 4l)
  • Salt
  • 1 pinch sugar
  • 1 EL chopped parsley

Remove the crust from the bread. Cut the bread into cubes.

Bring the stock to a boil in a saucepan. Add the bread cubes and bring to the boil briefly. Puree the whole thing.
3.
Gradually add the cheese to the broth while stirring. Pour in the white wine.
4.
Heat the soup again while stirring, season with salt and sugar.
5.
Serve the cheese soup sprinkled with parsley.
