Alfons Schuhbeck: Tirami Su beer with spiced cocoa sugar

  • 1/2 Vanilla pod
  • 1 large untreated orange
  • 1 untreated lemon
  • 50 g sugar
  • 1 TL allspice grains
  • 2 Cloves
  • 10 black peppercorns
  • 250 ml Altbier
  • 2 eggs (size M)
  • 60 g Icing sugar
  • 250 g Mascarpone
  • 4 EL Orange liqueur
  • 100 g Whipped cream
  • 200 g Ladyfingers
  • 2 EL Schuhbeck's spice cocoa sugar

Cut open the vanilla pod, scrape out the pulp. Wash orange and lemon with hot water, rub dry. Peel a strip from the orange and lemon peel with a potato peeler. Use lemon otherwise. Halve and squeeze the orange. Caramelize sugar in a saucepan. Deglaze with orange juice. Add the spices, vanilla pulp, lemon and orange peel, bring to the boil, pour in the beer, allow to cool. Then pour through a fine sieve. Separate eggs. Beat egg yolks and 30 g powdered sugar over a hot water bath until lightly frothy. Stir in the mascarpone and orange liqueur. Beat the egg white until stiff, sprinkling in 30 g of powdered sugar. Whip the cream until stiff, fold in. Dip half of the ladyfingers into the beer brew and layer them close together in a baking dish (approx. 1.5 liters). Spread half of the mascarpone cream on top. Repeat the process with the ladyfingers and cream. Chill for 4–5 hours. To serve, dust with cocoa sugar and arrange on plates
