Aioli

  • 1-2 Garlic cloves
  • 2 Egg yolk (room temperature)
  • Salt
  • 200 ml olive oil
  • 1 TL medium hot mustard
  • pepper
  • 1- 2 TL vinegar

Peel the garlic, press it through a garlic press. Salt the egg yolks a little and stir with the whisk of the hand mixer until foamy. First add the oil drop by drop, then also in larger quantities while stirring constantly. Stir in mustard and garlic. Season with salt, pepper and vinegar. Cover and let stand for at least 1/2 hour
