After-work noodles

For 4 people
  • Salt, pepper
  • 1 glass (approx. 290 g) red and yellow roasted peppers
  • 1 onion
  • 100 g Bacon
  • 400 g Penne
  • 1 EL Oil
  • 1 TL tomato paste
  • 200 g whipped cream
  • 4 stem (s) flat-leaf parsley

3–4 l salt water (1 teaspoon salt per liter ) bring to a boil. Drain the peppers and cut into small pieces. Peel onion and chop finely. Cut the bacon into strips.

Put the pasta in the boiling salted water and cook according to the instructions on the packet. Heat oil in a pan. Fry the bacon and onion in it for 2-3 minutes. Add the pepper strips and tomato paste, sauté briefly.

Deglaze with cream, bring to the boil. Simmer for 3–5 minutes. Season to taste with salt and pepper.

Wash the parsley, shake dry, chop finely, stir into the sauce. Drain the pasta and mix with the sauce. In addition: Parmesan.
