After-work Caesar salad

For 4 people
  • 3 slices toasted bread
  • 3 EL + 150 ml of mild olive oil
  • 400 g Chicken fillet
  • 1 small romaine lettuce
  • 3 Anchovy fillets (glass)
  • 1 fresh egg (Gr . M)
  • salt
  • pepper
  • 1 TL Mustard
  • 1 TL lemon juice
  • 1 onion
  • 2 Garlic cloves
  • 50 g Parmesan (piece)

Dice toast. Roast in 2 tablespoons of oil, remove. Wash the meat, pat dry. Fry all around in 1 tablespoon of oil for about 12 minutes. Clean and wash the lettuce and cut into strips.

Anchovies, egg, 1 pinch of salt, pepper, mustard and lemon juice (everything at room temperature!) withMix in a hand blender. Mix in 150 ml of oil, if necessary dilute with water. Peel, chop and stir in the onion and garlic.

Slice the parmesan, stir in half. Mix with salad. Cut the meat. Add the croutons and the rest of the cheese to the salad.
